Abuelo’s Mexican Restaurants recently celebrated its 25th anniversary, and we joined the fun by tasting new and traditional menu items. We also met the restaurant’s executive chef, Luis Sanchez, and additional corporate staff who were in town from Lubbock where Abuelo’s is based.
Now through August 4, you too can celebrate with the Silver Anniversary Menu. This three-course meal starts off with fresh guacamole, your choice of the sauteed chicken zucchini, ribeye steak or enchiladas and traditional flan for dessert. Don’t forget to order a margarita! The limited-time Silver Celebration Margarita comes with Cuervo Silver Tequila. St. Germain Liqueur and lime juice.
Appetizers and Drinks
We started off with chips, a variety of salsas and fresh guacamole.
Mexican Shrimp Cocktail: Made with freshly diced jalapeños, onions, cilantro and tomatoes. Served over avocado cream.
Agave Margarita: This specialty is made with 1800 Silver Tequila, Blue Agave Nectar and hand-squeezed lime juice. Additional drinks to try are the sangria swirl, platinum margarita and a variety of beers and wines.
Entrees
Ribeye steak: 10-ounces of ribeye with rice and beans on the side. Plenty of protein here!
Enchiladas: Hand-rolled steak and chicken enchiladas with your choice of corn or flour tortillas. Served with refried beans and Mexican rice.
Cheeseburger Torta: Here’s a twist on the traditional burger! The cheeseburger torta is served with juicy beef patties layered with cheese, lettuce, tomato and onion on a telera roll and served with fries.
Dessert
Dulce de Leche Cheesecake: A creamy cheesecake whipped with Mexican caramel
Margarita Pie: Chilled lime pie drizzled with tequila cream
Traditional Flan: Chef Luis Sanchez developed this delectable dessert from his grandmother’s original recipe.
Tres Leches Cake: Vanilla cake with three types of cream
